pork tenderloin roll
Ready-to-cook marinated pork tenderloins in various flavors like barbecue, lemon & garlic, etc. are another time saving dinner entree idea. Roasting it has always been tricky though, even with the timer and temperature controls. Timing is important for the pork to be well done but not dry. We have always been fond of lean meat particularly tenderloin. My sister-in-law and I used to buy from the same vendor whenever we shop in the local meat market and we would always make sure that we get the leanest cut of pork or beef. This was not the first time we tried this particular brand of marinated pork tenderloin, which we think have been quite consistent with their quality. For extra flavor, I combined finely minced fresh rosemary and garlic with a little olive oil and spread the mixture evenly on the butterflied pork, which was then rolled & tied. The roll was roasted in a 350 degrees F oven for about 45 minutes or until well done and served with some colorful mixed veggies.
