caprese bruschetta

Another attempt to eat lighter and healthier now that the new year has just started. This fresh mozzarella and prosciutto roll is one of my favorites at our local grocery's cheese section. Sliced fresh tomatoes and basil leaves along with toasted rustic bread like ciabatta complete the picture (above). A simple dip or dressing made with olive oil, minced fresh garlic, red pepper flakes, finely chopped parsley, salt and pepper was spread on the bread and sprinkled over the bruschetta at serving time. A fresh and easy way to lighten up any meal.
