This is an easy to fix meatless baked dish. Basically, this is eggplant parmigiana, a classic Italian dish. After I pan-fried the egg-dipped and breadcrumb coated eggplant slices, I layered them in a dish with marinara sauce and grated cheese then topped it with more marinara sauce and grated cheese as well as some crumbled feta cheese then baked it until bubbly. The dish may be made lighter by not breading and pan-frying the eggplant slices but instead just slicing it thinly then layering it with the sauce and cheese.
