a little antipasto

sliced feta cheese, smoked ham, hard-boiled eggs,
quartered tomatoes, orange bell pepper strips
sprinkled with fresh basil leaves and greek oregano

mixed green and kalamata olives

Antipasto which translates to "before the meal" can be a huge platter consisting of marinated vegetables, several kinds of cured meats, olives and many more as discussed in this guide from Whole Foods Market. This small plate I put together was a simpler version but it was just the right appetizer for our meal. For the vinaigrette, I mixed together dijon mustard, red wine vinegar and slowly added the olive oil, whisking the mixture until well emulsified and thicker. Drizzle the vinaigrette on the antipasto at serving time.
