spinach and ricotta savory rolls


Frozen chopped spinach is another one of my must-have supplies in the freezer. Mixed with ricotta cheese, it was a classic filling combination for these savory rolls. I have a bread recipe that I like to use to make dinner rolls but any basic roll recipe will work just as well.


After thawing out the frozen spinach, squeeze it well to get rid of excess water before mixing with the ricotta cheese for the filling. Simply season the filling with salt and pepper. Minced garlic may also be added if desired.


Using a rolling pin, roll out the dough into a rectangle about 1/4" thick. Spread the filling evenly and roll it up carefully so the filling stays inside. Cut into pieces then place on baking sheets. Bake at 350F for about 20 minutes or until tops are lightly toasted. Serve with a salad or soup for a light lunch or dinner idea.
