cranberry upside down cake


The appearance of fresh cranberries in the grocery stores and markets only meant one thing, the holiday season has began. We got a batch of fresh cranberries this week which I immediately used for this cake. The striking bright red color of the fresh cranberries remained unchanged throughout the baking process making this cake stand out as a festive centerpiece for the holiday table.



The cake was light and not overly sweet with hints of vanilla and lemon flavors that went well with the tartness of the cranberries. This was a lovely upside down cake that showcased the cranberries and made them glisten like shiny red jewels on top of the cake.

It's the season for family and food once again as we celebrate Thanksgiving next week across the US. We will celebrate with my husband's family again this year and we look forward to this special holiday with hearts filled with gratitude for all our blessings.
