grilled pizza

A universal food that's a favorite of all ages, we all know that pizza can be done in so many flavors and ways. For quite sometime now, I've wanted to try to make grilled pizza. I've found a few recipes online as well as in food magazines, but this one is from a trial copy of Cuisine magazine. The light pizza dough in this recipe used a combination of all-purpose and cake flours. The dough was rested for an hour before dividing and forming into four portions. These portions were shaped into rounds and allowed to rest and rise. With a rolling pin or dough roller, roll out dough to about 1/4" thickness. Preheat outdoor grill or grill pan. Brush the rolled out dough with olive oil and slowly transfer to heated grill. The dough will bubble up as it cooks. Lower the heat, then brush the pizza dough with more olive oil before flipping to cook the other side. Brush with more olive oil and fill with any preferred pizza ingredients. We just made a simple and basic pizza sauce, pepperoni and cheese combo. Grill the pizza until the cheese has melted. Slice and serve immediately.
