easy side salad
It was a challenge and a test for a little creativity in the kitchen when I made this salad with very limited ingredients and without the usual salad greens. It was a gloomy rainy day and the thought of getting out just to buy my missing salad veggies didn't sound very appealing. All I had in the fridge and pantry were a can of chickpeas or garbanzo beans, tomatoes, cucumber, green olives and some feta cheese. Surprisingly, this salad turned out quite good. Chop tomatoes and cucumbers in small chunks and transfer to a serving bowl. Next, drain and rinse a can of garbanzo beans and remove the peel. This was the only time consuming part. It's alright to leave the peel but we just got into the habit of removing them. Combine the chickpeas with the tomatoes and cucumbers. I had a little bit of fresh cilantro leaves which I chopped as well and added. Not a big deal if it's not available. For the dressing, a simple lemon juice, sugar, olive oil, salt and pepper combination were mixed and blended well together. Pour the dressing over the veggies at serving time. Top with diced feta cheese. Garnish with more chopped fresh cilantro, if desired.
