potato pancakes
One of the appetizers we used to order at the German restaurant we like were these potato pancakes. I found it challenging to duplicate exactly those they served there but these came close. I used a julienne slicer gadget that looks like a peeler to cut the potatoes in uniform strips. A food processor with a grater attachment works just as well and much faster. To make sure that the potato strips are dry, roll them up in a clean towel and press or wring it well. Beat one egg and add some flour. Season with a little salt and pepper. Mix until well blended. Toss in the potatoes. Pan fry like pancakes until edges are crisp and golden brown. Serve warm with sour cream.
