This style of pan fried stuffed bell peppers was what I would always cook whenever I get nice looking bell peppers in the market. This was the first time I stuffed and baked them with a basic filling of cooked brown rice and browned ground beef. The filling was seasoned with salt, pepper and Italian seasoning. Grated cheese in the filling would have also made a good addition to enhance the flavor of the dish. I like that the bell peppers retained their bright colors throughout the baking process.
A sprinkling of paprika on top finished the preparation before the stuffed peppers were baked for an hour in the hot oven. Shown above, the cooked peppers were garnished with sprigs of parsley and served with mixed vegetables for a light and easy supper.
